Peanut butter, puffed rice and fruit and nut squares

Another week almost comes to an end. As I try to think of the next recipe to post, my eyes fall upon the old notebook where I had jotted down this recipe for peanut butter, puffed rice and fruit and nut squares filled with the goodness of an assortment of fruits, seeds and nuts. I had posted this recipe way back in 2008, and it was quite popular but since everything from my then website has long since gone (read about it here), I decided to post this recipe again today so that both my old and new readers can enjoy this very easy to put together snack too. And the fact that I still had the photos to go along with the recipe in one of my old hard drives was definitely a bonus.

On another note, many of you have asked for my old recipes that you had loved; I will keep trying to see what I can salvage. At the moment, I am trying to go through my hard drives to see if there are any photographs to go along with the recipes that I found in my old notebook. So, I will try to keep posting them as much I can along with new recipes. I don’t have videos to go with all those old recipes, but will try to update the posts when I do create them.

Coming back to the recipe for these peanut butter and puffed rice squares. It makes for a wonderful snack to kill those peckish feelings. You can also carry a couple along with you as an energy bar on the move ( work, travel, trek) ; or pack some into your kids lunchboxes and your own too! And if you are feeling a bit leisurely, and I mean, you can actually afford to sit down for breakfast, break up a couple of squares, pour some cold milk and enjoy.

It is a very adaptable recipe – you can add in your own favourite assortment of fruits, nuts and seeds – and is ready in minutes. All you have to do is to wait patiently for it to cool completely, cut into squares and enjoy.

Fruit and nuts used-

I have used a mixture of various fruits, nuts and seeds; a mixture of raisins, cranberries, chopped walnuts, almonds, cashews and pistachios; and sesame, pumpkin and sunflower seeds. I had bits of  this and that nuts, fruits and seeds. You can use as much variety or more of just a few types.

Substitutes-

I have made these bars by substituting the molasses with equal amount of honey, and they came out equally well. The colour will be slightly lighter and may not have the intense flavour of molasses/treacle, but they will taste good too.

Peanut butter, puffed rice and fruit and nut squares

These crunchy peanut butter, puffed rice and fruit and nut squares are filled with the goodness of an assortment of fruits, seeds and nuts. A very adaptable recipe which is easy to put together and ready in minutes. A perfect snack or energy bar to have at home or on the move. Great as a snack in lunchboxes too; both for the young and not so young.
Prep Time 5 minutes
Course Breakfast, Snack
Servings 16 squares

Ingredients
  

  • 3 cups puffed rice / moori
  • 1 cup assorted seeds, chopped fruits and nuts of choice. See notes below.
  • cup chunky peanut butter
  • 5 tbsp low fat blackstrap molasses or black treacle. See notes below.

Instructions
 

  • Line and grease an 8 inch square dish.
  • In a bowl, mix together the puffed rice , seeds, dried fruits and nuts.
  • Mix together the peanut butter and molasses. Microwave for 2 minutes, stirring once in between.
  • Add the peanut butter mixture to the puffed rice mixture, and mix quickly using your hands ( be careful, it will be a little hot; use a spoon if you need to).
  • Transfer the mixture to the lined and greased dish and press it down as firmly as you can.

  • Cool completely ( placing the dish on a rack helps to speed up the cooling process), cut into squares / bars ( I cut them into 16 squares).
  • Store in air tight containers and enjoy.

Notes
