In a world where we're constantly chasing novelty In a world where we're constantly chasing novelty - something new, something exciting, something that keeps us entertained - perhaps there's something to be said for the comfort of the simple and familiar too.

That's exactly what this humble plate of food was for lunch today.

Nothing fancy. Just plain rice with a simple mixed vegetable curry of butternut squash, cabbage and cauliflower, a fresh salad and a spinach and red lentil dal along with a boiled egg and a slice of lemon.

And yet, it felt so special.

Sometimes it's not the extraordinary things that nourish us the most, but the simple, familiar ones. The meals we've grown up with. The flavours that bring us home. The quiet comfort of knowing exactly what to expect.

Perhaps that's why comfort food is called comfort food. It doesn't just fill our stomachs; it has a way of settling the heart too.

Happiness is turning out these crisp mung dal and Happiness is turning out these crisp mung dal and spinach dosas with a bowl of my homemade roasted butternut squash soup – the latter, a firm family favourite. Both the heart and the tummy are well fed today.

I'd originally planned to make a curry to go with the dosas, but I simply couldn't be bothered. So, there was no chutney or sambar with these dosas today either. Instead, I made a pot of roasted butternut squash soup with the butternut squash that was almost a goner, and it turned out to be the perfect pairing. Sometimes the simplest meals are the most satisfying.

There's no fixed recipe for the dosas as I just eyeballed everything – mung dal, a little urad dal, a small handful of rice, garlic, ginger, green chillies and some spinach.

The roasted butternut squash soup recipe is already on my blog (link in bio) if you'd like to give it a try.

Not the combination I'd originally planned, but this mix-and-match meal was just perfect.

Simple food, made with love (and rescued ingredients!), has a way of nourishing far more than just our appetite.
