Kordoi is a beautiful traditional Assamese snack, Kordoi is a beautiful traditional Assamese snack, named after the star fruit it resembles — delicately shaped, deep-fried, and coated in sugar syrup, lovingly prepared during festivals like Magh Bihu.

This, however, is a savoury version. There’s something about the crunch of Nimokhia Kordoi ( nimokhia=savoury) that instantly brings back memories of home — the sound of laughter, the warmth of family gatherings, and the festive joy that fills every Assamese kitchen during Bihu. 

Usually, the sweet version is more common, but this savoury kordoi is a lovely change — crisp, flavourful, and perfect with a cup of tea. My version, made with whole wheat flour, spices, and finely chopped vegetables, these crisp little folds are perfect with a cup of tea or as a festive snack.

Even miles away, every fold and fry of the dough takes me back to those Bihu mornings when neighbours dropped by, conversations flowed easily, and the kitchen table was never empty.

I’m so happy to share this cherished recipe again — timeless, comforting, and full of memories.

It's Magh Bihu next week. Magh or Bhogali Bihu arrives in Assam with full granaries, fuller hearts, and kitchens filled with the aroma of freshly made pitha. It is a time of gratitude, togetherness, and delicious rice and coconut based treats.

Among them, Tilor Pitha — stuffed with sesame and jaggery — holds a special place. Unlike most pithas made from dough or batter, tilor pitha is wrapped in nothing but finely ground, locally sourced glutinous rice ( Bora saul / rice). It relies on the natural stickiness of glutinous rice to hold its shape, giving it a character and charm of its own. It’s a delicacy unique to Assam and close to my heart.

Every time I make these, I’m taken back to my childhood kitchen — standing beside my Ma, watching her roll hundreds of pithas to serve family, neighbours, and every guest who walked in. Bihu wasn’t just about food. It was about sharing, warmth, and love.

From pounding rice in the old iron ural (a large, heavy mortar) back home all those years ago to using an electric grinder in the UK, the process may have changed — but the memories remain the same. I can still hear the rhythmic cling-clang of metal on metal, a sound that once echoed through our courtyard. Ma made sure we all took turns, teaching us that every celebration was also a shared effort.

Times have moved on — even back home, the old iron ural has now given way to electric grinders, but the memories and flavours remain unchanged.

For years, I hesitated to make til pitha here… but, a few years ago, nostalgia soon won. With Magh Bihu approaching in a few days, I’m sharing this cherished recipe again, hoping it brings a little piece of Assam into your home, just as it brings me back into mine.

Here’s a cosy, wholesome bake straight from my kitchen — a spiced sweet potato and wholewheat bundt cake filled with raisins, pumpkin seeds, and sunflower seeds. Naturally moist from the sweet potato and lightly dusted with icing sugar.
