Rosemary and garlic roast potatoes

The perfect roast potatoes; crisp on the outside, fluffy on the inside and full of flavours.

Ingredients
  

  • 4-5 large potatoes ( I used rooster potatoes)
  • a few sprigs of rosemary
  • Oiliv oil
  • 4 large cloves of garlic, crushed
  • 1 tsp smoked paprika
  • salt and freshly ground pepper to taste

Instructions
 

  • Chop, wash and boil the potatoes until cooked 70% of the way. Drain and leave on a sieve for a few minutes to let most of the moisture evaporate. Do not rinse with cold water.
  • Pre heat the oven at 200 deg C
  • Transfer the potatoes to a baking dish.
  • Drizzle enough olive oil and add the rest of the ingredients. Rub them well into the potatoes.
  • Bake in the centre of the oven for 25-30 minutes or till the potatoes are cooked all the way through, and crispy and golden on the outside. Stir once in between.
  • Bet served hot!
