Orange salmon bake

Pieces of salmon are drizzled with a delicately spiced orange and olive oil dressing and baked. The recipe is easy to put together. It is simple enough to cook on a regular basis and sophisticated enough to grace your entertaining table.

Ingredients
  

  • 560 gms salmon (I used steaks with bones in) cut into small pieces-see notes below
  • 1 large orange, half sliced and half juiced
  • ¼ cup olive oil
  • 2 cloves of garlic, crushed
  • ½ tsp salt (or as per taste)
  • ½ tsp paprika
  • ½ tsp crushed red chillies
  • freshly ground pepper

Instructions
 

  • Pre heat the oven at 200 deg C.
  • Arrange the salmon pieces in a baking dish, in a single layer.
  • In a bowl, add the olive oil, garlic, crushed red chillies, paprika, salt and the juice of half the orange. Whisk together.
  • Add the orange slices to the olive oil-orange mixture and coat the orange slices in it.
  • Except the orange slices, pour the mixture over the salmon pieces. Toss them well in the mixture.
  • Arrange the salmon slices in a single layer with the skin side down.
  • Add freshly ground pepper over it.
  • Arrange the orange slices on top.
  • Cover the dish tightly with foil and seal the edges.
  • Place the dish in the centre of the pre heated oven and bake for 20 minutes.
  • Serve hot as a side dish or main course.

Notes

  • I used salmon steaks and cut them into small pieces, bone and all. If you prefer, you can use boneless salmon fillets.
